Rick and Kathy Adams planted their 7.5-acre vineyard on an ancient, rock-strewn deposit left by the meandering Russian River, the defining geographic landmark in the Alexander Valley. The rocky soil stresses the vines into producing small clusters with tiny berries, resulting in concentrated flavors. California Bay Laurel trees at one corner of the vineyard and a stand of Eucalyptus trees on the opposing corner impart subtle minty flavors to the Cabernet Sauvignon grapes.
"The flavor profile of the 2004 Adams Knoll Cabernet Sauvignon tastes of ripe, dark
berry fruit and black plums, with a smooth texture. A plush, rich and deep mouthfeel
is structured by a seamless tannin framework that provides backbone. Aging for
20 months in 62% new French oak barrels contributes flavors of mocha, caramel
and vanilla."
