The aromas of The Cutrer are reminiscent of fresh mountain air, supported by damp earth aromas of warm summer rain in the Sierras. The overall impression is fresh, crisp and lively, with high floral notes. The textural impression in the mouth is round, rich and chewy, balanced with crisp apple acidity that pleasantly lingers on the palate.
A fresh, elegant lobster salad is an excellent pairing with the rich flavors of The Cutrer. Remove the cooked meat from the lobster and slice the tail into medallions; gently spread the medallions into a half round on a bed of butter lettuce, placing one perfect claw on the side. Dress sparingly with light oil, lemon juice, The Cutrer and a touch of Dijon mustard, balanced with a little sugar, salt and pepper. The leanness of the salad complements the full flavors of this special Chardonnay. Other main course suggestions are grilled western veal chops or a simple chicken breast sauté with a sauce of The Cutrer, butter and freshly minced tarragon.
